Cauliflower Pizza Crust

I am always looking for tasty ways to remove wheat and gluten from my diet. Being that pizza is one of my favorite go-to meals; I was so excited to try this recipe from the Detoxinista.

I tried mine with my homemade marinara, sauteed garlic, mushrooms and spinach topped with mozzarella cheese (as seen below).

Hope you Enjoy! – Melissa

Cauliflower Pizza Crust

Makes 1 large crust

Total Time: 1 hour and 10 minutes

4 cups raw cauliflower rice (1 medium head)
1 egg, beaten
1/3 cup soft goat cheese (chevre)
1 teaspoon dried oregano
pinch of salt

Preheat the oven to 400F.

In batches, pulse cauliflower florets in a food processor until they form a rice-like texture.

Fill a large pot with an inch of water. When the water comes to a boil, add the cauliflower and cover. Cook for about 4-5 minutes. Drain into a fine-mesh strainer.

Once you’ve strained the rice, transfer it to a clean dishtowel or cloth napkin. Squeeze until most of the moisture is gone.

Put cauliflower into a large bowl with the remaining ingredients and mix with your hands until well blended.

Place the dough out on a baking sheet lined with parchment paper and form into 1/3 inch thick crust

Put the crust in the oven and bake for 45 minutes or until the crust turns a golden brown. Remove from the oven and add toppings. Place back into the oven for 5-10 minutes. Serve immediately.

Tip: Try using purple or orange cauliflower for a colorful twist that kids will love!
